Why This one

a few words from me

A simple dessert recipe that you can prepare in minutes. I really like combination of tofu and fruits. Caramelized plums and peaches are now one of my favourite additions to my morning porridge . Tofu can be prepared savoury or sweet. I really like vegan cheese and I always have tofu in the fridge. If you want a creamier texture, always choose soft silken tofu for Your desserts.

WHAT YOU’LL NEED

INGREDIENTS

4 peaches stoned

3tbsp orange juice

350g/12oz soft silken tofu, drained

2 tbsp maple syrup

1 tbsp demerara sugar

4-5 gluten-free ginger cookie ( or another flavour)

THE how to make

INstructions

1.Roughly chop 3 peaches and puree with a hand blender or in a food processor until smooth.

2.Add the orange juice and blend again

3.Whizz the tofu with hand blender or in a food processor until smooth.

4.Stir in the maple syrup

5.Break cookies in small pieces

6.Place cookie pieces on the bottom of the glass

7.Place tofu mixture on top of cookie pieces

8.Place the peach puree on tofu mix

9.Peel and chop into small pieces last peach, place on peach puree

10.Decorate with fresh mint
