Why This one

a few words from me

Cassoulet - a rich, slow-cooked casserole originating from the south of France. The traditional cassoulet is from the towns of Toulouse and Carcassonne. This is vegan version, so sauce is enriched with other vegetables to give it extra flavours.

WHAT YOU’LL NEED

INGREDIENTS

Ingredients:

8 Vegan sausages,

200 ml white wine

3 carrots

2 celery sticks

1 yellow and 1 red pepper,1 red onion

1 small sweet cabbage

few Romano beans

2 tin butter bean

1 tin kidney beans

1 passata di  Pomodoro or 1 tomato paste mixed with water,

Vegan gravy powder,1 tsp garlic paste,1 tsp smoked paprika.

THE how to make

INstructions

1.Bake sausages in the oven

2.Cut all the vegetables into dices.

3.Preheat 3 tbsp olive oil in the pan, add onion, carrots and celery.

4.Season with salt, pepper, smoked paprika and garlic paste. Let it cook for 3-4 minutes.

5.Next add yellow and red pepper, romano beans, cabbage and wine, let it cook for another 3-4 minutes.

6.Add passata di Pomodoro, butter beans and kidney beans.

7.Let it cook on the small flame until all vegetables are cooked but not mushy.

8.Thicken with 2-3 tbsp vegan gravy powder.

9.Place sausages into sauce and let them soak for few minutes before serving,this will prevent the sausages to be dry.
