Frittata is an egg-based Italian dish similar to an omelette or crust-less quiche or scrambled eggs, enriched with additional ingredients such as , cheeses or vegetables. The word frittata is Italian and roughly translates to "fried".

WHAT YOU’LL NEED

INGREDIENTS

Ingredients:

400g new potatoes, boiled, quartered

2 zucchini,2 red onion

200g garden peas (frozen)

1 tbsp olive oil

12 eggs, beaten

Salt, pepper, garlic powder, dry oregano.

THE how to make

INstructions

  1. Heat a little bit of olive oil in an ovenproof frying pan and add the onion
  2. Cook for about 2 mins until softened, add diced potatoes, peas and zucchini
  3. season with salt, pepper, garlic powder and oregano, cook for another 5 minutes
  4. Beat the eggs in a jug and season well
  5. Pour over the vegetables in the pan
  6. finish under the grill until golden and cooked through or in the oven (190`C for about 8-10 minutes)
  7. Cut into wedges and serve from the pan with salad
