Frittata is an egg-based Italian dish similar to an omelette or crust-less quiche or scrambled eggs, enriched with additional ingredients such as , cheeses or vegetables. The word frittata is Italian and roughly translates to "fried".
WHAT YOU’LL NEED
400g new potatoes, boiled, quartered
2 zucchini,2 red onion
200g garden peas (frozen)
1 tbsp olive oil
12 eggs, beaten
Salt, pepper, garlic powder, dry oregano.
THE how to make
Heat a little bit of olive oil in an ovenproof frying pan and add the onion
Cook for about 2 mins until softened, add diced potatoes, peas and zucchini
season with salt, pepper, garlic powder and oregano, cook for another 5 minutes
Beat the eggs in a jug and season well
Pour over the vegetables in the pan
finish under the grill until golden and cooked through or in the oven (190`C for about 8-10 minutes)
Cut into wedges and serve from the pan with salad
