It's a simple healthy protein-packed breakfast, snack or even light meal! Quick and easy Avocado Toast with Egg 4 ways – fried, scrambled, boiled and poached. Simple to make, tasty and satisfying.

WHAT YOU’LL NEED

INGREDIENTS

1 G/F baguette cut into diagonally slices,

1 avocado,

2 eggs,

olive oil, lemon

light hollandaise sauce,

chilli flakes

THE how to make

INstructions

1.Cut the baguette in diagonally slices

2.Pour few drops olive oil on them, salt, pepper

3.Grill them

4.Smash avocado with a little bit of lemon, garlic, salt and pepper

5.Poach eggs and finish everything with chilli flakes and hollandaise sauce

The light version of Hollandaise sauce:

1cup low-fat plain yoghurt, plain

2teaspoons lemon juice

3egg yolks,1⁄2teaspoon salt

1⁄2teaspoon Dijon mustard

1pinch fresh ground pepper

Optional 1 tbsp fresh dill or parsley

Place a strainer/sieve over a saucepan of water and place a bowl in the sieve. Beat yoghurt, lemon juice, egg yolks well. Heat over simmering water, stirring frequently, until the sauce has thickened, approx 15 min (sauce will become thinner after about 10 min and then thicken again). Remove from heat and stir in salt, mustard, pepper and dill/parsley (if using).
