Why This one

a few words from me

I know perfectly well that you like barbecue BBQ sauce. For today I have planned ribs in a homemade BBQ sauce. I make barbecue sauce from only good and natural ingredients with the addition of smoked plums to obtain a characteristic taste. The smoking flavour is characteristic for BBQ sauce. If you choose to skip it, unfortunately it will result in ketchup, not sauce. What's more, barbecue BBQ sauce is sweet, spicy and aromatic, definitely! For sweetening, I use the before mentioned plums and muscovado sugar or dates. It's great in both cases.‍

WHAT YOU’LL NEED

INGREDIENTS

2 racks of brined pork ribs, weighing around 1kg (2lbs)

2 kg of tomatoes

4 onions

2 teaspoons of salt (more or less to taste)

300g of smoked prunes or 2 tsp smoky paprika

200-250 grams muscovado sugar

3 tablespoons of apple cider vinegar

950 g of tomato paste

2 heaped tablespoons of sweet paprika

5 tablespoons of oil


THE how to make

INstructions

Preheat oven to 200 `C

Prepare roasting tray ( mix together 3-4 tbsp olive oil, 1tsp garlic powder or paste, salt and pepper, spread mix in roasting tray)

Place Ribs in roasting tray, pour BBQ sauce all over ribs

Cover with tinfoil and roast in the oven for about an hour (depend on oven)

After an hour take off tinfoil and roast for another 10-15 minutes

Homemade BBQ sauce:

Peel the tomatoes

Slice the onions and fry in oil until golden

Add mashed tomatoes, smoked plums, salt, sugar, vinegar and paprika to the fried onion

Mix it very thoroughly and cook, covered, for 40 minutes.

Blend future BBQ sauce with a blender, add tomato paste, mix and cook until boiling again.

You can serve the BBQ sauce with sandwiches, vegetables, and as a

marinade for meat, cheese and eggplants.


Serve with any stir fried vegetables (I used green vegetables stir fried with Chinese five spice) and sweet potato chips au gratin (sprinkled with gluten free breadcrumbs)
