Jambalaya its a very simple dish rich of spices, meat and vegetables. Is indeed very tasty and excellent for recycling pieces of roast left over from Sunday dinner: beef, pork, roasted chicken, sausages or even meatballs.Jambalaya consists in mixing various ingredients, while maintaining one iron rule that the ingredients must include the vegetable "holy trinity" of Creole cuisine, that is, onion, celery and peppers, plus rice. The rest are absolute free cook styles.To create my way of cooking Jambalaya I have used red jambalaya, cajun jambalaya and gumbo recipes. Instead of cooking in the pot for long time, the vegetables are stir fried and rice cooked separate. If You are using left over meat (any type),cut it into dice or strips and preheat in the oven, before adding to stir fried vegetables.

WHAT YOU’LL NEED

INGREDIENTS

2 tbsp olive oil

2 chicken breasts cut into strips

1 onion, diced

1 red,1 yellow,1 green pepper, diced

2 zucchini, diced

1 celery, chunkily chopped

75g chorizo, sliced

300 g long grain rice, cooked

400g can plum tomato, blended

Dry Seasoning mix:

2 tbsp Cajun seasoning

1 tbsp dry cumin

1 tbsp dry coriander

1/2 tbsp jerk seasoning

1 tbsp smoked paprika powder (or BBQ powder)

1 tbsp garlic powder

THE how to make

INstructions

1. Chop the chorizo ​​into slices and put them into a wide saucepan. Heat until the sausage starts to brown. Add the chicken and fry together with the chorizo ​​until the

meat and sausage brown well. Transfer to a dish

2. Pour 2 tablespoons of oil into the rendered fat from chorizo. Heat it up. Chop the onion finely and put it in the pan. Fry for 5 minutes

3. Wash the peppers and celery, then dice them. Add to the onion, stir and fry for 5 minutes, until the vegetables are tender

4. Add zucchini , cook for another minute

5. Add all spices, stir and fry for another 2 minutes.

6. Pour blended canned tomatoes and fry for another 2-3 minutes

7. Add chicken and chorizo

8. Add cooked rice, stir well

9.Season with salt, possibly pepper (chorizo ​​is usually spicy, and the spices used to contain cayenne pepper)
