The carrot cake is tall, moist and fluffy. If you have carrots at home, this will be the best and tastiest way to use it. Is delicious without toppings. You can decorate with melted dairy-free chocolate or simple icing sugar.I bake a carrot cake in round baking tray 20 cm, but you can also use a rectangular baking tray.

WHAT YOU’LL NEED

INGREDIENTS

Ingredients:

1.5 cups of grated carrots (about 3-4 carrots)
1.5 cups of flour
4 eggs
1 cup of oil
1 cup of sugar
1 teaspoon of baking powder
1 flat teaspoon of baking soda
1 teaspoon of cinnamon
1 teaspoon gingerbread spice (can be omitted)
1 tablespoon of vanilla sugar
1 cup of chopped walnuts
half a teaspoon of salt

THE how to make

INstructions

1.Grate the carrots on a fine-mesh grater.

2.Cut or break the walnuts into small pieces.

3.Set the oven to 180 ° C and start with the cake.

4.Beat the eggs with sugar and vanilla essence for about 3 minutes.

5.Start adding oil slowly - the dough will absorb all of it while mixing.

6.Whipping constantly, gradually add the flour mixed with salt, powder and baking soda.

7.The dough should be thick.

8.Add cinnamon and possibly gingerbread spice.

9.Finally, add the grated carrots and nuts and mix for the last time.

10.Grease the baking tray(preferably a 26 cm round) or cover it with baking paper.

11.Pour the dough and bake it for about 45-55 minutes. (best to check with a stick).
